Vitamins are important to our health. These are necessary molecules to obtain in our diet because we do not produce them. Vitamins function as cofactors for enzymes. Cofactors are necessary enzyme helpers. One example is Vitamin C. This vitamin is a cofactor for more than one enzyme, but one of the enzymes is responsible for the production of collagen in our cells.
Minerals and vitamins are not the same. Minerals like calcium or magnesium, are not organic (do not contain carbon). Vitamins can either be water soluble or fat soluble.
In this discussion board, choose one vitamin and provide the following information about your chosen vitamin:
1) Is your vitamin water or fat soluble?
2) Give an enzyme or cellular process that requires this vitamin.
3) Find two foods (only 2) that are high in this vitamin. Don’t give more than 2, so that others in the class can add to the list.
4) Post on someone else’s vitamin discussion with an additional food that is high in their chosen vitamin.
You will need to do some research to complete this assignment. Think about the quality of your sources of information. News sources as well as academic and government websites (Universities, USDA, FDA, CDC, etc) are good online sources. You have access to great resources online via the TCC library . You use the same sign as for MyTCC. I recommend Science in Context or Today’s Science as good databases to use for this course. An example of sources that aren’t good choices are personal blogs. Also, try to not to use Wikipedia. You can begin there, but try to verify the information. Lastly, make sure to cite your sources – use any format you prefer (MLA, APA, etc.)
